Parmesan Polenta Fries

Makes 8 servings

2 cups whole milk
1 quart chicken stock
2 tablespoons unsalted butter
3 1/4 cups polenta
1/4 cup parmesan cheese
1/4 cup chopped parsley
salt and black pepper, to taste
1 quart vegetable oil, for frying

Using a large saucepan over high heat, bring to a boil milk, chicken stock and butter. Slowly whisk in polenta. Reduce heat to medium low, continue cooking and stirring until polenta pulls from edge of pan, about 15 minutes. Add cheese and parsley, and season with salt and pepper, to taste.
Spread polenta evenly on a lightly greased baking sheet. Refrigerate until cold.

Cut chilled polenta into 3/4 x 3/4 x 3 1/2 inch sticks. Using a large saucepan over medium high heat, heat the oil to 365 degrees. Line a baking sheet with paper towels. Fry polenta sticks in batches, until golden brown and crispy. Transfer to prepared sheet and drain.
