Mango Salsa:
6-8 mango spears
1-2 tomatoes
1 peach

3-4 sprigs of fresh parsley
Dice the mango, tomatoes, and the peach into tiny pieces. Transfer them to a bowl then use a pair of scissors to add some freshly cut parsley to the mixture.


Fried Plantains:
2 ripe plantains
3 tablespoons olive oil

Peel and slice the plantains into thirds horizontally then cut them into fourths vertically to form finger sized slices. Saute in a pan with a little bit of olive oil on medium to high heat watching them closely so they don't burn. Turn heat down and put the lid on to let them finish off.


Seasoned White Rice:
1 cup of rice
2 cups of water
1 tablespoon of butter
1/2 teaspoon of basil

Put 1 cup of rice and two cups of water into a rice cooker if you have one and set them to cook. Once done transfer the rice to a large bowl and add 1 tablespoon of butter. Mix thoroughly. Finally, add a half teaspoon of basil for taste.


Black Beans:
1 can of black beans

Heat the beans in a pan for 5-7 minutes until sauce thickens.


Jamaican Black Pepper Shrimp:

1 lb of uncooked large shrimp (41-50 count)
1/4 of a cup of white rice flour
1/3 teaspoon of cayenne pepper
1/2 teaspoon of black pepper
pinch of salt
1/2 teaspoon of thyme

Take 1/4 of a cup of white rice flour and mix it with 1/3 teaspoon of cayenne pepper, 1/2 teaspoon of black pepper, a pinch of salt, and 1/2 teaspoon of thyme. Stir mixture and pour over shrimp to coat. You do not need to use the entire mixture - just enough to coat the shrimp to your liking.

1 cup of chicken broth
1/3 of a cup of minced garlic
1 cup of Budweiser or Bud Light
4 tablespoons of Worcestershire Sauce
1/2 cup of black molasses
1  1/2 teaspoons of McCormick Perfect Pinch Caribbean Jerk Seasoning

Mix the ingredients listed above into a bowl then transfer into a large sauce pan. Stir for about 5 minutes on high heat with no lid then add the following into the pan while over the heat:

1/4 cup brown sugar
1/4 cup KC Masterpiece Marinade Caribbean Jerk
2 tablespoons of butter

Stir on high for another 5 minutes with no lid then add the shrimp. Continue to monitor on high for another 5 minutes then set to medium heat and cook for another 5 minutes while the sauce thickens.
