Cashew Chicken




SWEET and SPICY CASHEW CHICKEN
Cheesecake Factory Copycat Recipe

Sauce:
1 tablespoon soy sauce
1 tablespoon rice wine or dry sherry
2 tablespoons soy sauce
1 tablespoon cornstarch
2 teaspoon sugar
1 teaspoon white vinegar

Chicken:  
2 whole chicken breasts, boned, skinned and cut into 3/4-inch cubes
1/4 cup vegetable oil
1/2 to 1 teaspoon crushed red pepper flakes
3 green onions, sliced diagonally
2 cloves garlic, minced
1 Teaspoon minced fresh ginger - optional
1/2 cup unsalted cashews
1/2 teaspoon sesame seeds
1/2 teaspoon black sesame seeds
cooked rice

Marinate chicken in 1 tablespoon soy sauce and rice wine for 30 minutes.
Sauce:  Combine 2 tablespoons of soy sauce, cornstarch, sugar and vinegar and set aside.

Chicken:  Heat oil in wok or skillet. Add chicken and stir fry for 2 minutes. Remove chicken. Add green onions,garlic and ginger and stir fry for 1 minute. Return chicken to wok. Cook 2 minutes. Stirring constantly, add sauce to wok and heat for 1-2 minutes. Add cashews and sesame seeds. Serve over cooked rice.
